As part of the Sustainability course you may see some more unusual posts from me, but I will try to keep them as interesting as possible.
To sustain myself I currently need to live as cheaply & efficiently as possible, as some of you will know I left my job at the end of last year so currently live off my new husband! To help with this I have been reading Jack Monroe's wonderful blog (google her, she is fabulous) and the incredible threads on the Old Style boards on Money Saving Expert forums - my favourite being the £7 a week one.
Yesterday I made some "breakfast muffin breads", which cost only 8 or 9p each. They aren't huge (possibly due to my out of date self raising flour) and are nothing fancy, but they taste nice and would do for breakfast along with a coffee and a yoghurt.
They are made by mixing approx 100g of any kind of dried fruit (sultanas are cheapest) into 200g self raising flour.
Melt 100g of spread, add 50ml water, 50ml milk (semi skimmed or soya is best) and 1 tsp of vinegar (this is instead of an egg, you can also use a banana as an egg substitute so I may try this soon), and add the liquid to the flour mix. Stir until combined.
Grease a muffin tin, and pop in the oven for 15 minutes at 180 degrees centigrade.
I've also got a cheap soda bread recipe to try, and some piadina flatbreads which use lard... I've never bought lard and I can't say I'm looking forward to cooking with it...
